Happy Hour
In Room Settings, define a happy-hour window (say, opening until 7 PM) with discounted room pricing. The guest's Room Cost Estimate on the booking page reflects it automatically, so the discount sells itself. A guest choosing between 6 PM and 8 PM sees the difference in dollars right on the time picker.
Spend Minimum
A minimum spend tells groups what a room "costs" to hold even when the room fee itself is low. It appears in the guest's cost estimate before they book, so the expectation is set before they walk in rather than argued at the register.

The pairing that works: happy-hour discounts pull demand into dead hours, spend minimums protect margin in prime hours. Doing only the second makes slow nights slower.
